Preparation

  1. Soak the chickpeas overnight
  2. Boil until cooked. Drain and cool.
  3. Roast the peppers, peel and finely cut.
  4. Finely dice the onions, cucumbers, parsley and also the sun dried tomatoes.
  5. Mix everything together, including the pine nuts.
  6. Season to taste and drizzle with olive oil.
