Preparation
- Grill a slice of salmon together with thinly sliced courgette.
- In the meantime, spread a thin layer of mayonnaise on one of the two sides of the bread slices and then toast them in a frying pan: this trick will make them brown and tasty.
- When turning the bread, spread mayonnaise on the other side as well for even browning. While everything is cooking, slice an avocado and a tomato. You can leave the avocado whole or mash it with a fork, seasoning with salt, oil and pepper.
- When the courgettes are ready and well browned, salt them and set them aside. Leave the salmon slightly pink inside to keep it soft and juicy.
- Now for the assembly. Take the first slice of bread and spread it with a little mayonnaise. On top arrange the chopped salmon, grilled courgette, a few slices of tomato and the avocado, which you can also spread on the side of the next slice of bread. Add a lettuce leaf and close the first layer. Repeat the same process for the second layer, then close with the last slice of toast.
- At this point, press the sandwich lightly to compact it and cut it in half with a sharp knife. The result? A super tasty club sandwich, perfect for a different lunch or a quick and tasty dinner!
