Crunchy Oat and Walnut Biscuits

Preparation

  1. In a bowl, whisk together the sifted flour, oats, sugar, and cinnamon.
  2. Using your fingertips or a pastry cutter, rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Add the lemon juice and mix until the dough just comes together.
  4. Roll the dough out on a lightly floured surface into a long sausage shape. Cut the dough into 1cm thick slices.
  5. Preheat your oven to 175°C (350°F). Place the biscuit slices on a baking sheet and bake for 23-25 minutes, or until lightly golden brown.
  6. While the biscuits are still hot from the oven, press a piece of chocolate into the center of each biscuit. The heat will melt the chocolate. Immediately, sprinkle chopped walnuts on top of the melted chocolate
  7. Allow the biscuits to cool completely on the baking sheet. Once cool, store them in an airtight container.
