Preparation
- Prepare the filling:
- Mash the gbejna (or ricotta cheese) until smooth.
- In a separate bowl, beat the egg.
- Add the mashed cheese, Parmesan cheese, beaten egg, peas, and black pepper to a bowl.
- Mix all the ingredients well until well combined. Assemble the Ftira:
- Preheat your oven to 200 degrees Celsius (Gas Mark 6).
- Unroll one packet of puff pastry dough on a lightly floured surface.
- Spread the prepared filling evenly over the pastry dough, leaving a border around the edges.
- Fold the edges of the pastry dough inwards to create a border around the filling. Bake the Ftira:
- Place the filled pastry on a baking tray lined with baking paper.
- Sprinkle sesame seeds over the top of the Ftira.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the filling is cooked through. Serve:
- Once golden brown, remove the Ftira from the oven and allow it to cool slightly before slicing and serving.
