Preparation

    Prepare the filling:
  1. Mash the gbejna (or ricotta cheese) until smooth.
  2. In a separate bowl, beat the egg.
  3. Add the mashed cheese, Parmesan cheese, beaten egg, peas, and black pepper to a bowl.
  4. Mix all the ingredients well until well combined.
  5. Assemble the Ftira:
  6. Preheat your oven to 200 degrees Celsius (Gas Mark 6).
  7. Unroll one packet of puff pastry dough on a lightly floured surface.
  8. Spread the prepared filling evenly over the pastry dough, leaving a border around the edges.
  9. Fold the edges of the pastry dough inwards to create a border around the filling.
  10. Bake the Ftira:
  11. Place the filled pastry on a baking tray lined with baking paper.
  12. Sprinkle sesame seeds over the top of the Ftira.
  13. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the filling is cooked through.
  14. Serve:
  15. Once golden brown, remove the Ftira from the oven and allow it to cool slightly before slicing and serving.
