Preparation
- Wash and thinly slice the apples. Place them in a large bowl.
- Finely chop the fresh herbs (coriander and mint in this recipe suggestion), spring onion, and ginger. Add them to the bowl with the apples.
- Drizzle the olive oil, rice vinegar (or apple cider vinegar), and sesame oil over the apple mixture. Season with salt to taste. Toss everything well to combine.
- Crumble the vegan Greek style block into the slaw and add the nigella seeds. Toss well to ensure even distribution.
- Preheat your oven to your desired temperature (consider the focaccia baking instructions). Drizzle each focaccia with olive oil and sprinkle with a pinch of Chinese 5 spice.
- Top the focaccia with the prepared apple slaw. Sprinkle the focaccia with the finely chopped spring onion greens and some additional salt for taste. Bake the focaccia in the preheated oven for 5-8 minutes, or until warmed through and slightly crisp around the edges.
