Preparation

  1. Slice the aubergines and shallow fry in olive oil until golden on both sides. Repeat until all cooked and set aside.
  2. Cut the mozzarella into slices.
  3. Pick some basil leaves and grate the parmesan before starting to assemble.
  4. Pick a dish of your choice wther it being deep or wide.
  5. Start with some passata, olive oil and basil leaves, then layer with aubergines, a sprinkle of breadrcrumbs, parmesan and mozzarella.
  6. Add a few tablespoons of passata and olive oil
  7. Start with another layer of aubergines and repeat until all the ingredients are used up.
  8. Bake in a hot oven set on 180 degrees Celsius for 30 to 40 minutes.
