Preparation
- Slice the aubergines and shallow fry in olive oil until golden on both sides. Repeat until all cooked and set aside.
- Cut the mozzarella into slices.
- Pick some basil leaves and grate the parmesan before starting to assemble.
- Pick a dish of your choice wther it being deep or wide.
- Start with some passata, olive oil and basil leaves, then layer with aubergines, a sprinkle of breadrcrumbs, parmesan and mozzarella.
- Add a few tablespoons of passata and olive oil
- Start with another layer of aubergines and repeat until all the ingredients are used up.
- Bake in a hot oven set on 180 degrees Celsius for 30 to 40 minutes.
