Prawns with burrata and clementines, roe and balsamic vinegar

Preparation

  1. Clean the shrimp by removing the head and intestines.
  2. Put a little oil in a pan and cook the prawns very quickly for 1 or 2 minutes.
  3. Blend the burrata, pepper and the juice of a clementine in a blender to obtain a homogeneous sauce.
  4. Peel a clementine and cut into very small cubes.
  5. Presentation

    Arrange the burrata on the bottom of a finger-food container and place a prawn on it. Lightly grate some roe over it. Finish with a few drops of balsamic vinegar and clementine cubes.
