Preparation
- Wash the herbs, lettuce, zucchini and cucumber. Shake the herbs to dry them and chop them finely. Clean the lettuce and coarsely chop it. Cut the cucumber into thin slices. Peel the onions and finely dice them. Finely grate the zucchini, mix with 1/2 teaspoon salt and let stand.
- Meanwhile, mix quark, milk, herbs (except a few for garnish), half the onion cubes, and avocado oil until smooth. Season with salt and pepper, cover, and set aside.
- For the waffles, squeeze the zucchini well and mix with the remaining onion cubes, eggs, cheddar cheese, bread crumbs, flour, and baking powder. Season the mixture with salt and pepper.
- Heat a waffle iron and grease it well. Bake 3 to 6 waffles golden brown one after another.
